Kvass from dry kvass without yeast on rye flour

Of course, kvass without sourdough will not work, so we'll start with it. Its preparation will take four days, so plan it in advance.

1 day: Pour 4 tablespoons of rye flour into a jar and pour 100 ml of water. Add a teaspoon of sugar and stir well. Cover the jar with damp gauze on top and leave it in a warm place.
2 day: Add 2 tablespoons of rye flour and pour 50 ml of water, maintaining the consistency of sour cream. Cover and leave again.
Day 3: Repeat the actions of day 2. Remember, the starter should not be thick!
Day 4: The starter is ready!

Now we are preparing the kvass itself. This process will be much faster.
Prepare purified cold water in a convenient jar. Add the rest of the ingredients to it. Stir everything well, cover the jar with gauze and leave in a warm place for a day.

The next day, carefully, without stirring the contents of the jar, strain the kvass through a tightly folded gauze. (To reuse the starter, do not drain all the liquid, leave 1/5 of the contents. Just top up the water and add half as many ingredients (kvass, sugar), cover the jar with gauze again and leave for a day.)

Cool the kvass and enjoy the taste of a healthy tonic drink!
