Since the recipe is given according to GOST, all the ingredients are indicated in grams, so you will have to use kitchen scales.
To prepare a cupcake, choose high-quality condensed milk without vegetable additives. The same applies to butter. It is desirable that these products are also GOST.
All ingredients must be at room temperature. We take the butter out of the refrigerator in advance so that it softens well.
Raisins are selected from the twigs, washed well. If the raisins are dry, soak them in water for 20-30 minutes until softened. Drain the water, dry the raisins very well.
Mix flour with baking powder, sift.
Beat the soft butter with a mixer for 5 minutes until fluffy. Without stopping whipping, gradually add sugar and vanilla sugar. Whisk for another 5-7 minutes.
Without turning off the mixer, pour in a thin stream of condensed milk, beat until smooth and the sugar is completely dissolved.
Add one egg at a time, beating well after each. You should get a lush mass. We set aside the mixer, it will no longer be needed.
Pour in the flour sifted with baking powder. Mix thoroughly until the lumps disappear. The dough is elastic, the consistency is similar to thick sour cream.
Pour in the prepared raisins, add wine. Mix everything together.
Sverdlovsk cupcake used to be baked in a special diamond shape. At home, you can use any. Lubricate the mold with vegetable oil, pour out the dough, level the top.
Bake the cupcake in a preheated 170 degree oven for about 1 hour and 10 minutes. If the top is well browned, and the cupcake is not ready yet, cover the top with foil. We check the readiness with a wooden skewer. If it comes out of the cake dry, then the baking is ready. The baked cupcake is completely cooled.
We cook sugar syrup. In a convenient container, combine water with sugar, mix and put on fire. Let it boil. Cook the syrup over high heat while stirring for 1 minute, cool a little and smear the top of the cake with a culinary brush.
Fragrant, tender Sverdlovsk cupcake is ready.
Have a nice tea party!
