Burbot fish soup

Delicious burbot ear! Especially for fishermen and fish lovers). Fresh herbs can be added to the ear if desired. If the soup seems too "empty", it is allowed to supplement it with carrots. The recipe is interesting because olives can be replaced with other vegetables, for example, zucchini or cucumbers. In the photo, just a variant with cucumbers and carrots. Milk and liver can also not be added. Burbot is the only fish of the cod family that is found in rivers and lakes with fresh water. Therefore, Russian fishermen really appreciate this fish, and burbot ear is considered one of the most delicious. I really offer you a Mediterranean version of burbot soup. This is such a "female version" soup, which I cook sometimes to my wife. ;) For this culinary recipe, it is best to take burbot with milk.

Burbot clean, gut, take out the liver and milk, soak.

Then carefully remove the skin.

Scrape the meat off the bones, put it in a bowl.

Put in a saucepan: tail, fins, bones, head. Pour cold water and cook for 20 minutes with peppers, lavrushka, whole onion, chopped parsley root, carrot slices.

Strain the broth and pour it into another saucepan.

Roll burbot meat through a meat grinder, mix with raw egg, flour, salt and pepper everything.

Bring the broth to a boil.

From the resulting dough, roll such a roller 3 cm thick and throw it into boiling broth for 5 minutes.

After pulling out with a slotted spoon, cool and cut into mugs.

Boil the liver and milk in the broth.

3 minutes before the end of cooking, add capers, halves of olives, butter and burbot dumplings to the soup.
