Achuchuk salad

Delicious, quick to prepare, simple vegetable salad! Salad with an unusual name "achuchuk", which translates as "sharp knife", came to us from Uzbek cuisine. Its name is due to the fact that all vegetables – tomatoes and onions are cut very thinly for salad, which can only be done with a sharp, well-sharpened knife. At home, this very simple vegetable salad is usually served with pilaf. But in general, it will perfectly complement any hot, meat dish. No dressing is used in this salad, but due to its own vegetable juice, the salad turns out to be quite juicy and tasty.

Onions are cleaned on the husks, we also cut them into very thin halves of rings. To remove the pronounced bitterness, the onion can be filled with cold water and left for 15 minutes.

    Tomatoes should be used for this salad dense, with a delicate skin, not very ripe and soft, so that they do not immediately turn into porridge. Tomatoes are washed, dried with paper towels and cut into very thin small pieces.

    My hot pepper pod, remove the seeds and finely chop with a knife. If there is no fresh hot pepper at hand, it can be safely replaced with dry ground spices.

    Fresh basil is thoroughly washed under running water, dried with paper towels, finely chopped, sent to a bowl with vegetables. Instead of basil, you can use other herbs, for example, parsley and cilantro.

    Put all the ingredients in a bowl, add salt, mix. Vegetable oil, mayonnaise or sour cream are not used as a dressing for this salad. When mixing vegetables, juice is allowed, which is enough to make the salad seem juicy and tasty. It turns out a natural and healthy spicy vegetable snack, which is perfect for shish kebab, fried or baked meat. Enjoy your meal!

Some housewives even prepare this salad for the winter. It is enough just to spread the salad in pre-sterilized jars, sterilize it in jars in a water bath for 10 minutes and roll it up. And in winter you will enjoy this traditional dish of Uzbek cuisine as a savory snack.
