A very simple, but nevertheless delicious culinary recipe called "Cold Kostroma borscht" differs from other cold borscht and beetroot (which Russian cuisine is so famous for) by the presence of boiled beans. It gives the whole dish a very pleasant, delicate taste.
To begin with, thoroughly wash the beetroot and cook it in the peel in a small amount of water, where you need to add a little vinegar. Next, peel the beets and cut them into strips. We also boil potatoes and cabbage separately; we cook potatoes in a uniform, cabbage – in large chunks. After the vegetables cool down, we chop the cabbage finely, and cut the peeled potatoes into long thin slices. Our beans should also be boiled. It is better to add salt to the water. We put beets, potatoes, cabbage and beans in a separate saucepan and pour bread kvass. Here we also send chopped green onions, diced egg whites and greens. Rub the yolk with sour cream, salt and a small amount of sugar – this will be a dressing for borscht. Food is served cold on the table, preferably from the refrigerator.
