Let's start the preparation of green adjika with the preparation of ingredients:

1. Tarkinsky and green Bulgarian pepper are washed, dried, cleaned from seeds and stalks.
2. The hot pepper is washed and dried.
3. Garlic is cleaned.

Next, chop the prepared vegetables in a blender, combine or simply using a meat grinder. You should get a homogeneous porridge-like substance.
Put the vegetable mixture into a deep bowl, add salt, sugar and vinegar, mix and set aside for 25-35 minutes.
While the adjika is infused, we prepare the jars: steam and dry them.
We put the adjika in jars, tighten the lids and put it away for storage in the refrigerator.

We serve adjika as a sauce for meat dishes.
