    To prepare a salad of boiled red beans and carrots, we will need 100-150 grams of beans in dry form, three medium-sized carrots, 1-2 cloves of garlic, crackers and mayonnaise. To make the salad healthier and tastier, it is best to use homemade mayonnaise of your own production for dressing. Crackers can be taken ready-made or cooked yourself.

    It is better to soak the beans before cooking for at least two hours, and preferably overnight. This way we will reduce the cooking time of the beans. Then we wash the beans and put them to cook for about one hour. Salt the beans 10 minutes before the end of cooking.

    When the beans are cooked, we leave them in the water in which they were cooked for about half an hour.

    Peel the carrots, wash them and grate them on a medium-sized grater. Add spices (I have ground black pepper), salt and mix well.

    Squeeze one clove of garlic into a salad of boiled red beans and carrots. Add mayonnaise and mix well.

Salad of boiled red beans and carrots has many variations with the replacement and addition of various ingredients. Beans and carrots remain the same base.

You can add crackers, smoked sausage or cheese to beans and carrots. Garlic can be replaced with onions (both pickled and fried with the addition of vegetable oil). It is possible to use canned beans for salad preparation, as it does not require time for preparation, but it is healthier and tastier with boiled. And if you use ready-made crackers with different flavors, then the salad will have a new original and piquant note every time.

Salad crackers can be prepared by yourself. To do this, it is best to use toast bread or a sliced loaf, since they crumble less during slicing. Sliced bread is either fried in a dry pan or dried in the oven.
