Pasta with tomatoes

Fragrant pasta with tomato sauce with basil. Luxurious! I came up with this recipe a long time ago and was finally able to implement it. I wanted to combine two types of tomatoes in one recipe: a regular tomato base and fresh cherries. In combination with fresh basil, the sauce turned out to be very interesting. Delicious and satisfying!

    Which tomatoes will work best? Take large, ripe and juicy fruits. Wash them. From above, make criss-cross incisions with a sharp knife. Put it in boiling water for 1-2 minutes. Remove, cool and peel. Cut into small cubes. If the tomatoes are very juicy, watery and when slicing they let a lot of juice, put them in a bowl so that the resulting liquid does not spread on the cutting board.

    Wash cherry tomatoes, dry with paper towels. Cut into slices.

    Peel the garlic, cut the cloves in half. Wash the basil, dry it and chop it finely.

    Put the butter in the pan. Melt it with constant stirring. Add garlic. Fry it for 2 minutes. Then the garlic should be removed, otherwise it will give an unpleasant smell during further cooking.

    Put the tomatoes cut into squares in a frying pan. Add salt and sugar. Mix it up. In the process of cooking tomatoes will let the juice. Bring them to a boil. Reduce the heat to a minimum. Simmer with periodic stirring for about 15 minutes. The excess liquid should evaporate during this time.

    Now add cherry tomatoes and basil to the tomato sauce in the pan. Stir the contents and remove the pan from the heat.

    While the sauce is cooking, boil the pasta. How to cook spaghetti properly? Pour water into a wide saucepan. Put it on the fire. When it boils, add salt (about 10 g of salt per 100 g of pasta). Place the spaghetti with a fan, without breaking it. Cook over low heat, stirring occasionally. Do not close the lid. Boil until al dente (read the instructions for cooking time). Try. If ready, discard the finished pasta in a colander. In any case, do not rinse with water.

    Transfer the spaghetti to the pan with the sauce. Mix it up. Arrange the pasta on plates. Sprinkle with fresh basil leaves or parsley. Serve the dish hot. Bon appetit!

The finished pasta can be sprinkled with finely grated parmesan or any other delicious hard cheese before serving. The dish is self-sufficient and does not need an addition, but, if necessary, it can be served as a side dish to meat.

In addition to spaghetti, you can use any pasta. For example, horns, spirals, butterflies, penne, farfalle.

If you like, cut onion or blue onion into half rings or small squares. Fry it, and then add the chopped tomatoes.

Tomatoes can be replaced with tomatoes in their own juice.

Oregano, nutmeg (a pinch), Italian herbs (about 1 teaspoon) are suitable for additional spices.
