    How to make Avar khinkal? Start cooking with broth. How to make broth? Take beef pulp, salt, pepper and bay leaf. It is allowed to replace beef with chicken or lamb if desired. You can add onion and garlic to the broth for a richer taste, which we do.

    Put all the products in a saucepan, fill with clean water. Since the broth needs to be saturated, put the meat in cold water, but do not cook for a long time so that it does not digest and does not become too tasteless. Bring the water in a saucepan to a boil and cook the broth over medium heat, removing the foam, for 40-50 minutes (depending on the variety and quality of meat).

    While the meat is cooking, prepare the dough. How to make dough? Sift the flour into a large bowl. Add salt and soda, mix them with flour. Pour kefir in a thin stream, kneading the dough.

    Knead a soft dough that does not stick to your hands. Cover it with a towel and leave it to rest.

    Then, when the meat is cooked, strain the broth, pour it back into the pan. Remove the meat from the broth and wrap it in foil to keep it hot.

    Prepare the sauce. How to make sauce? Take the products for its preparation. Instead of sour cream, you can take natural yogurt. Chop the garlic — grate it on a grater or pass it through a press. Wash the greens, dry them and chop them finely.

    Mix sour cream, salt, crushed garlic and finely chopped herbs thoroughly in a cup. Cover it and put it in the refrigerator.

    Roll out the dough into a layer 0.5-0.6 cm thick.

    Cut it into small pieces.

    Bring the broth to a boil again and boil the dough pieces for 4-6 minutes, no more.

    When the dough is inflated, slightly stratified on the slice, and a white foam appears around — you can take it out. Cook in portions of 10-15 pieces, depending on the diameter of the pan.

This dish for my family was a very pleasant and delicious discovery from the world of cooking.

For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!

For this recipe, it is better to take not frozen, but fresh meat, otherwise the finished meat risks getting dry.
