  1. Step 1:

    Step 1.

How to wipe sea buckthorn with sugar for the winter? Prepare the products. Sea buckthorn usually ripens in September, that's when it's time to make this preparation. Choose berries that are fully ripe, but dense. Crumpled and spoiled can cause fermentation. Take the amount of sugar in a ratio of 1:1. You can take a little more, then the workpiece will be stored even better. But you don't need less — the jam will spoil.

  2. Step 2:

    Step 2.

Sea buckthorn is well sorted, selecting bad berries and removing garbage with twigs. Put the berries in a large bowl and pour cold clean water. Wash the berries properly with your hands, they can be very dirty. Then drain the water. And rinse the sea buckthorn in this way two more times. Then discard the berries in a colander or sieve and let the water drain completely.

  3. Step 3:

    Step 3.

Spread out ordinary or paper towels on the table. Scatter the berries on them, trying to make them lie in one layer. Leave the sea buckthorn in this form for 10 minutes to remove the remaining liquid from it. Then blot it on top. The preparation of dried berries is stored much better.

  4. Step 4:

    Step 4.

Pour the dried sea buckthorn into a large bowl. Fill it with sugar in the right proportion. Mix the berries with the sugar.

  5. Step 5:

    Step 5.

Punch the sea buckthorn with an immersion blender to a puree state, all the berries should be crushed. If you don't have a blender, scroll it through a meat grinder or interpret it with a pusher. You will get a fairly liquid mass, as it should be — sea buckthorn contains a lot of juice. Leave it at room temperature for a couple of hours, and then put it in the refrigerator for 8 hours. This is necessary in order for the sugar to dissolve. Stir the mass from time to time.

  6. Step 6:

    Step 6.

Prepare the jars for harvesting. It is better to choose a small container so that after opening it is quickly eaten. Sterilize the jars in any way possible. About how to do this, read the link at the end of the recipe. Boil the lids. Pour the mashed sea buckthorn into the prepared dry jars and cover them with lids. Put it away for storage in a cold place. In winter, cook sea buckthorn from such fruit drinks, teas, add it to other dishes. Bon appetit!
