Take it out of the refrigerator in advance so that it becomes room temperature. Pour the kefir into a large bowl. Add sugar (you can change the amount of sugar depending on what you will bake), a pinch of salt to balance the taste, soda. Mix the ingredients with a whisk.

    In a separate bowl, whisk the chicken egg with a whisk so that the egg white is completely dispersed. Pour the egg mixture into a bowl with liquid, mix and start pouring the sifted wheat flour. Flour must be sifted to avoid foreign objects and debris that may be in the flour entering the dough, and saturate this product with oxygen, which, in turn, will make products from it softer and more airy.

    Add the flour in small portions, stirring the ingredients with a spoon until the dough begins to gather into one lump. Then assemble the dough with your hands on the floured work surface into a ball. Flour may need a little more or less than the amount stated in the recipe, you will look at the state of the dough.

    You should get a dense, steep dough, but you don't need to knead it for too long so that it doesn't become hard. This dough, unlike the classic shortbread, cooked in butter or margarine, does not require time for cooling and keeping in the refrigerator. You can immediately proceed to rolling and baking from it. This dough can be used to make cookies, pies, cakes and other products.

You can make shortbread dough without the addition of kefir, in vegetable oil and egg yolks, but it seems to me that dough products with the addition of kefir turn out to be more rich and soft.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
