    How to make a Horseradish with hot capsicum? Prepare the products. The set is standard, nothing superfluous, but for piquancy and sharpness, hot pepper is added, and sugar and salt are added to maintain the taste balance. Horseradish is needed for harvesting fresh, juicy, not stored for a long time after digging.

    Tomatoes are washed, cut into quarters, cut out the attachment point of the peduncle.

    Horseradish is a very vigorous plant and during its grinding, especially if it is done the old–fashioned way - with a manual meat grinder, it will strongly corrode the mucous membrane of the eyes. Fortunately, in our conditions there are many kitchen assistants – household appliances. Horseradish roots need to be washed and cleaned with a knife, cut it into small pieces, you can immediately grind it into porridge with a blender, or you can later along with other ingredients.

    Peel the garlic from the husk, cut the cloves into large pieces. It can be passed through a press, or crushed together with other ingredients with a blender. The second option is better because during the joint processing of vegetables, there will be less acute vapors from garlic and horseradish, irritatingly affecting the mucous membrane of the eyes.

    We put all the cooked vegetables in a deep container or a large enameled pan (metal dishes made of oxidizing metal cannot be used for this recipe). I wash the hot pepper, remove the stalk with seeds. We send it to the rest of the vegetables. Everything is thoroughly crushed with a blender, until a homogeneous consistency of gruel is obtained.

    Add sugar and salt, mix. Let the mass stand in a saucepan for about an hour at room temperature.

    Meanwhile, prepare the jars for the workpiece. They need to be washed in a soda solution and sterilized in one of the usual ways: in a water bath, in a microwave oven or in an oven. The lids are washed and boiled.

    We put the horseradish in jars, roll them up and put them away for storage in a cool place. Horseradish is a powerful preservative, so such a preparation does not require sterilization. Enjoy your meal!

Remember that spices such as salt, sugar, as well as vinegar and its substitutes are used in recipes for winter preparations not only for taste, but primarily as preservatives. Therefore, in no case should you reduce the concentration of salt and sugar, and also replace vinegar (essence) with a weaker concentration than indicated in the recipe, otherwise vinegar (salt / sugar) will not show their preservative properties and the workpiece will be spoiled.
