Mostly mushrooms are eaten fried, but, I'll tell you, it's better to cook mashed mushroom soup from fresh mushrooms. Almost any spongy mushrooms will do. 
And so the mushrooms will be cleaned, thoroughly washed and finely chopped. Then transfer to a saucepan and simmer for 15 minutes. Then add a couple of tablespoons of butter and simmer on low heat for another 5 minutes.
After that, pour in the sifted flour and pour in the broth. Add salt, pepper and mix everything. Then add milk and sour cream. Cook for another 20 minutes.
Then we put the soup in a blender and grind it to a puree. We return it to the pan again and warm it over low heat. The finished soup is poured into plates and served on the table.
The soup turns out to be very fragrant and delicious, because nothing can replace the rich aroma of freshly harvested porcini mushrooms. Soup can also be made from other mushrooms, including champignons. Try it and you won't regret it
