Kefir 1-1.5 hours before the start of cooking, remove from the refrigerator. To make the dough more successful, it should be at room temperature. If you did not have time to do this, then just warm up the kefir or dilute it with hot water. Just be careful, make sure that the kefir does not curdle.

    To knead the dough, take a deep bowl in which it will be convenient to mix dry ingredients with kefir. Sift the amount of flour specified in the recipe to sift out small debris and saturate it with oxygen. To make the dough successful, you need to add liquid to dry, and not vice versa.

    In a separate container, mix kefir with salt and sugar until they are completely dissolved. Add the soda and mix thoroughly.

    Make a recess in the flour and pour the liquid component — kefir into it.

    Gently start kneading the dough, touching only the kefir and not touching the flour. Thus, the flour will be added gradually and the dough will become homogeneous.

    Keep kneading. If the flour is over, and the dough is still quite liquid, add a little more sifted flour. It may need both more and less of the declared amount. Look at the consistency of the dough.

    Knead the dough thoroughly. When it becomes difficult to knead with a spoon, transfer the dough to a dry and clean horizontal work surface and start doing it with your hands.

    The dough should be slightly elastic, but tender and not stick to your hands. Don't make it too steep, so as not to get rubber dumplings. Knead the dough and leave it to rest so that the gluten develops well. During this time, you can prepare the filling and put water to boil for cooking dumplings. I have some flour left. I used it when modeling dumplings.

Since the dough is quite tender, when rolling it can stick to the rolling pin and the surface, take this into account and generously sprinkle them with flour. Make dumplings, also sprinkling your hands with flour. The number of them will depend on the size. Someone likes big dumplings, someone quite small. I got about 30 small dumplings with strawberries.

Very tasty dumplings with various fillings are made from kefir dough. In combination with this dough, I love berry and cottage cheese.

If you make dumplings with berries, it is better to cook them immediately. Since the berries, after standing for a long time, will give juice and it can leak out of the dumpling and color the dough.
