Bagels with dry custard

Cooking method

Cooking time: 3 hours

1. Sift the flour through a fine sieve into a bowl in which we will knead the dough.

2. Add salt, sugar, baking powder to the sifted flour.

3. Here we also spread butter, sour cream and lemon zest. The oil should be at room temperature.

4. Knead a soft and plastic dough. It can be kneaded manually or with the help of an electric mixer and special dough nozzles.

5. We roll the dough into a ball, pack it in plastic wrap and put it in the refrigerator for an hour.

6. Pour the dry cream into a saucepan, dilute with half a portion of milk. Boil the rest of the milk, pour it into the mixture.

7. We send the saucepan to the fire, cook the cream until it thickens. Then cool to room temperature, then whisk with a mixer.

8. After the specified time, we take the dough out of the refrigerator, divide it into three parts.

9. Roll out the dough into a thin layer, cut the layer into 12 parts from the center to the edge.

10. Spread the cream on the wide edge of the dough strip, roll the strip into a bagel from the wide part to the narrow one.

11. This is how we proceed with the remaining two parts of the test.

12. Place the bagels on a baking sheet previously lined with parchment.
