Batumi salad from Ivleva

Light vegetable salad with amazing Georgian dressing. A salad of tomatoes, cucumbers and bell peppers with herbs is not something special for us. A spicy dressing of walnuts with cilantro gives it a Georgian flavor.

    Peel bell peppers from seeds and stems and cut into strips.

    In a salad bowl, combine cherry tomatoes, cucumbers, bell peppers and parsley. Mix everything together.

    To prepare a nut salad dressing, we will need: 80 ml of water; 50 g of walnut kernels; 5 sprigs of cilantro; 2 cloves of garlic; ½ tsp. suneli hops; ½ tsp. salt and chili pepper on the tip of a knife.

    Peel the garlic and chop it into large pieces with a knife. You can even add garlic whole cloves. Anyway, the sauce will turn out homogeneous.

    Put cilantro, walnut kernels, suneli hops, garlic, salt and chili pepper in the bowl of a blender or combine. Pour in the water.

Tomato and cucumber salad with bell pepper and herbs is the most frequent guest on the table. And this is not for nothing. After all, this easiest-to-prepare salad is available all year round.
Salads with lots of vegetables are in high esteem in Georgia. The most famous among them is "Tbilisi", which, in addition to tomatoes, bell peppers, red onions, includes boiled beef and beans. Well, the gas station is a little different. Sometimes I meet a recipe from Tbilisi called Batumi salad, but still these are different salads. Tbilisi is more satisfying, while Batumi is as close as possible to our usual tomatoes and cucumbers and supplemented with nut dressing.
And the dressing in this salad is its real highlight. Nut sauce can be made thicker or thinner if desired.
This sauce goes well not only with salads, but also with many other dishes, such as boiled, stewed or oven-cooked white fish, meat or poultry.
Usually refills are made with the addition of vegetable oil, more often olive oil, any oil will be superfluous, because walnuts already contain the necessary amount of fat. However, if you do not count calories, then you can safely add olive oil, but not very much, literally 1-2 tbsp. l .
If desired, you can add chopped walnuts to the salad to enhance the nutty flavor.
