Oatmeal cookie cake with sour cream

Simple and at the same time original dessert! Oatmeal cookie cake with a souffle based on cottage cheese, sour cream and cream is the most delicate delicacy for adults and children. The base of the cake is made from oatmeal cookies with walnuts. Nuts can be dried not only in a frying pan, but also in the oven. Cottage cheese for souffle should be homogeneous. If the cottage cheese is grainy, it needs to be wiped through a sieve. The mold for the specified amount of ingredients should be taken with a diameter of 20-22 centimeters, but no more. The form should be detachable, it is easier to extract the cake from it.

Cooking method

1. Prepare the base for the cake:

- walnuts are dried in a dry frying pan without adding oil;

- chop the nuts in a blender, not too small but not large;

- oatmeal cookies are crushed with a blender into fine crumbs;

- put the nuts and crushed cookies in a bowl, add the softened butter here;

- mix the ingredients thoroughly;

- we spread the resulting mass into a detachable mold, carefully tamped;

- we send the form with the base to the refrigerator for half an hour.

2. Prepare a tender curd-cream souffle:

- pour gelatin into a small container, fill with water (40 ml), leave for 15 minutes;

- put the cottage cheese in a bowl, pour sugar and vanilla sugar here, mix;

- put sour cream and whipped cream into the resulting mass, mix gently;

- then we put raisins and candied fruits into the curd mass;

- melt the swollen gelatin in a microwave oven or in a water bath, then pour it into a souffle, mix;

- we spread the resulting mass on a base of oatmeal cookies, level it, send it to the refrigerator.

3. For the top jelly layer:

- pour the right amount of gelatin into a bowl, fill with water, leave to swell for 15 minutes (40 ml of water is enough);

- put the swollen gelatin in the heated compote, mix until completely dissolved;

- wash the black currant, let the water drain, spread it on the surface of the cake;

- fill the currant with a mixture of compote and gelatin, send it to the refrigerator for 2 hours.

Decorate the cake to taste, as an option - walnuts and strawberries.
